Refreshing Green and Jasmine Tea created by Taylors of Harrogate, improved only by Slingsby Navy Strength Gin.

35ml Slingsby Navy Strength Gin

50ml Green and Jasmine Tea

Rosemary and Thyme Syrup

200ml Fevertree Naturally Light Tonic

Brew the Green and Jasmine Tea and leave to cool. Add gin, tea and syrup (see recipe below) to a shaker and shake well. Pour in a tall glass over ice and top up with tonic. Garnish with a grapefruit wheel and some rosemary. 

For the Rosemary and Thyme Syrup:

1 cup of water

1 cup of white sugar

2 fresh Rosemary sprigs (10-15cm long)

2 fresh Thyme sprigs (10-15cm long)

Bring water to boil in a small saucepan. Add sugar to the boiling water and whisk until fully dissolved. Add the clean, fresh herbs and let the mixture boil for around 60 seconds. Remove from the heat and leave the whole mixture to steep for around 30 minutes or until cool. Pour the syrup through a fine mesh strainer into a glass bottle or jar and store in the fridge. Simple syrups such as this are great for cocktails and baking and keep in the fridge for a month. To keep for longer, freeze in ice cube trays for up to 6 months.
