If you love an Aperol Spritz, this cocktail is a slightly adapted Slingsby version that is super refreshing and the perfect addition to a light lunch. The tartness from our Rhubarb gin works wonderfully alongside the bitter Aperol and we’ve added some fresh juice and sugar syrup for touch of sweetness.


30ml Slingsby Yorkshire Rhubarb Gin

20ml Aperol

50ml Prosecco

25ml Fresh Lemon Juice

10ml Sugar syrup

Handful of Fresh Raspberries

1 Basil Leaf


Shake all the ingredients aside from the prosecco. Double strain into a large wine glass with cubed ice and top with prosecco. Garnish with fresh raspberries and a basil sprig
